Hun zoetkracht is 0,4 tot 1 keer zo groot als die van gewone suiker of sacharose.<\/p>\n<p>Strikt genomen zijn polyolen geen koolhydraten, maar derivaten van koolhydraten. Zij zijn chemisch gereduceerd, waarbij het zuurstofatoom met dubbele binding is vervangen door een hydroxide- of alcoholgroep. Vandaar de naam suikeralcoholen.<br \/>Zij worden voornamelijk gebruikt als suikervervangers.<br \/>Zij kunnen worden gemaakt uit mono-, di- en trisachariden. Tot de bulkzoetstoffen behoren de polyolen (suikeralcoholen). Voorbeelden van polyolen zijn xylitol (E967), sorbitol (E420) en maltitol (E965).<br \/>Polyolen worden slechts gedeeltelijk opgenomen in de darm en leveren daarom minder energie dan gewone suiker, namelijk gemiddeld 2,4 kilocalorie\u00ebn per gram in plaats van 4 kilocalorie\u00ebn per gram. Alleen erythritol (E 968) levert geen energie. Het zijn koolhydraten die licht verteerbaar zijn. Ze worden niet gemetaboliseerd en worden gedeeltelijk opgenomen door de dunne darm. Verderop in de darm fermenteren de bacteri\u00ebn in de dikke darm het deel van de niet-opgenomen polyolen. Dat verklaart waarom ze energie leveren aan het lichaam. Daarom werd in dit geval Sucralose gebruikt. Sucralose is de meest gebruikte intensieve zoetstof in diepvriesdesserts en paste goed bij het algemene smaakprofiel.<\/p>\n<p>Erythritol, een natuurlijke zoetstof zonder calorie\u00ebn met een suikerachtige smaak, wordt gebruikt ter vervanging van sucrose uit een traditioneel recept op basis van suiker. Sorbitol wordt gebruikt als extra polyool in de formulering om de vriespuntdepressiefactor van het zoetstofsysteem te nivelleren en de vrieseigenschappen van de oorspronkelijke formulering te herstellen. Polydextrose wordt gebruikt om meer massa in het recept, aangezien het gebruik van polyool werd beperkt tot minder dan 10% om een laxerende waarschuwing te vermijden. Sucralose wordt gebruikt om de algehele zoetheid en smaak in evenwicht te brengen.<\/p>\n<p>Het recept &#8220;zonder toegevoegde suikers&#8221;, ingevroren met een vergelijkbaar overschrijdingspercentage van ongeveer 80%, biedt een romigheid en schepbaarheid die vergelijkbaar zijn met die van het gesuikerde origineel. Het smeltgedrag is aangenaam en het geeft een goed afgeronde smaakindruk. De formulering kan ook gemakkelijk worden aangepast om de claim &#8220;minder energie&#8221; te dragen. De EFSA (Europese Autoriteit voor voedselveiligheid) heeft voedingsclaims voor polyolen goedgekeurd in verband met het behoud van de mineralisatie van de tanden (door het verminderen van de demineralisatie van de tanden) en een vermindering van de glycemische respons na een maaltijd. Voor de meeste polyolen geldt een &#8220;niet nader gespecificeerde&#8221; aanvaardbare dagelijkse inname (ADI). Na verschillende veiligheidsbeoordelingen hebben deskundigen van het Gezamenlijk Comit\u00e9 voor levensmiddelenadditieven van de FAO en de WHO (JECFA) geconcludeerd dat polyolen veilig zijn voor de menselijke gezondheid en dat een beperking van de ADI niet nodig was.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][et_pb_column type=&#8221;4_4&#8243; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; hover_enabled=&#8221;0&#8243; global_colors_info=&#8221;{}&#8221; sticky_enabled=&#8221;0&#8243;]<\/p>\n<h2>Overmatige consumptie kan laxerend werken<\/h2>\n<p>Polyolen worden gebruikt als zoetstoffen, maar ook voor talloze andere technologische doeleinden, bijvoorbeeld als emulgator, stabilisator, bevochtigingsmiddel, verdikkingsmiddel en texturizer. Levensmiddelen die polyolen bevatten, moeten de volgende vermelding bevatten: &#8220;Overmatig gebruik kan een laxerend effect hebben.
